Vegan Burritos

1 cup brown rice, cooked and rinsed.
2 cloves garlic
1 yellow onion, diced
1 red or yellow pepper
1 can diced tomatoes
1 can of Black Beans
1 cup of sweetcorn
1/2 tsp Cayenne Pepper
2 tsp Chili Powder
1 tsp Ground Cumin
1 tsp taco seasoning

1.       Brown the garlic and onions.
2.       Add all other ingredients except the rice and cook until peppers are soft.
3.       Add the rice and mix well.
4.       Serve with flour tortillas, salsa and chips.
Makes about 4 burritos.
